BBQ Buffalo Ranch Chicken Skewers

Make more than you think! These chicken skewers go fast! Incredibly flexible, they can be a main dish or appetizer and perfect for any occasion.

Ingredients

  • Boneless and Skinless Chicken Thighs

  • Wooden Skewers

  • Buffalo Sauce

  • BBQ Sauce

  • Ranch Packet

  • Mad Donkey Blend (Salt, Pepper, Garlic Powder, Onion Powder, Paprika) or your favorite bbq seasoning

  • Sesame Seeds

  • Ranch Dressing

Directions

  • Pro tip: Soak your skewers in water while prepping. This prevents them from burning and becoming brittle.
  • Trim fat from chicken thighs and cube into squares
  • In a bowl, mix together bbq sauce, buffalo sauce, and ranch packet. Use the ration of the prominent flavor you like. I usually go 50/50.
  • Put the chicken into the mixture to coat all over.
  • Put chicken on the skewers.
  • Place skewers on grill or smoker at 300-325 degrees. Turn skewers a couple of times during cook.
  • While the chicken is cooking, in a small sauce pan, mix in bbq sauce, buffalo sauce, and seasoning.
  • Brush skewers with sauce about 5-10 minutes before removing them from the grill or smoker.
  • Pull chicken skewers off grill or smoker once internal temp is 165-175 degrees. Dark meat can handle higher internal temps.
  • Top skewers with sesame seeds and drizzle with ranch dressing. Serve.
