Ingredients
Boneless and Skinless Chicken Thighs
Wooden Skewers
Buffalo Sauce
BBQ Sauce
Ranch Packet
Mad Donkey Blend (Salt, Pepper, Garlic Powder, Onion Powder, Paprika) or your favorite bbq seasoning
Sesame Seeds
Ranch Dressing
Directions
- Pro tip: Soak your skewers in water while prepping. This prevents them from burning and becoming brittle.
- Trim fat from chicken thighs and cube into squares
- In a bowl, mix together bbq sauce, buffalo sauce, and ranch packet. Use the ration of the prominent flavor you like. I usually go 50/50.
- Put the chicken into the mixture to coat all over.
- Put chicken on the skewers.
- Place skewers on grill or smoker at 300-325 degrees. Turn skewers a couple of times during cook.
- While the chicken is cooking, in a small sauce pan, mix in bbq sauce, buffalo sauce, and seasoning.
- Brush skewers with sauce about 5-10 minutes before removing them from the grill or smoker.
- Pull chicken skewers off grill or smoker once internal temp is 165-175 degrees. Dark meat can handle higher internal temps.
- Top skewers with sesame seeds and drizzle with ranch dressing. Serve.
