Ingredients
Boneless Skinless Chicken Thighs
Kings Hawaiian Rolls
Pepper Jack Cheese
Buffalo Sauce
Ranch Packet
Butter
BBQ Seasoning
Ranch Dressing
Italian Seasoning
Directions
- Heavy trim chicken thighs and season all over with your favorite bbq rub/seasoning. I use Killer Hogs: The BBQ Rub. Place on a raised wire rack
- Make a sauce in a smoker safe pan using 3/4 stick of butter, the ranch packet, and buffalo sauce. Mix together as it melts on the grill/smoker.
- Place chicken and sauce pan in smoker at 300 degrees.
- About 10 minutes in the cook, dip chicken in the sauce pan, covering entire thigh.
- While chicken is cooking top rolls with a pat of butter and Italian seasoning. Place in 350 degree oven until butter is melted and you’re happy with the roll color/texture.
- Once Chicken is at 165+ internal, dip chicken in again and top with pepper jack cheese or whatever cheese you want.
- Pull chicken once cheese is completely melted and internal temp is between 165-175.
- Make sauce: Simple sauce of 3/4 ranch, 1/4 buffalo sauce. I like to put mine in a condiment bottle for easy use.
- Build your slider: Place chicken on bottom half, top with sauce and pickle. Enjoy!
