Chorizo and Eggs – Brunch Two Ways

The aroma of cooking chorizo is irresistible, especially on a Sunday morning. Welcome to our Sunday brunch featuring chorizo and eggs two ways! This is a perfect meal for those who love a hearty breakfast with a little bit of spice.

The first was a tostada topped with an over-easy egg over a bed of refried beans. Huevos Con Chorizo, or street tacos with chorizo and scrambled eggs, was the second.

Both were topped with home-made pickled onions, feta cheese, cilantro, and a shake of Cholula.

The potatoes were finished with a shake of “Hard Core Carnivore Tex Mex” seasoning that ‘Mad Donkey’ introduced me to, which he uses in his off-the-chain (is that phase still used by the under-40 crowd?) Street Corn Dip – recipe coming soon!

Chorizo and eggs Sunday brunch

Ingredients

  • 1/2 pound chorizo

  • 2-4 eggs

  • 1 cup potatoes

  • 1 can refried beans (use as little or much needed)

  • 2-4 tbsp butter

  • Corn tortilla shells

  • Feta cheese (or cotija)

  • Cilantro & hot sauce to finish

Directions

  • Bring pan to medium heat, and add small diced potatoes, a little water, and cover stirring occasional for 5-8 minutes (potatoes need to steam a bit to cook inside)
  • Once all the water has evaporated, add 2 tablespoons of butter and continue cooking potatoes until browned. Add shake of Tex Mex seasoning to finish. Set potatoes aside.
  • Using same pan, add chorizo and cook until almost finished. Add potatoes back to pan with chorizo.Img 7580
  • Put half of the mixture to the side.
  • Taco Version
  • Add scrambled eggs to remaining, mix to incorporate, and cook eggs.
  • Steam or use pan to warm corn tortilla. Place mixture evenly in each, and top with your choice of toppings. Enjoy!
  • Tostada Version
  • Add light coat of oil to pan, and shallow fry corn tortilla.
  • Warm refried beans with a splash of milk. Put layer of beans on shell.
  • Cover beans with pile of chorizo mixture.
  • Top with over-easy or medium egg. Dealers choice.
  • Finish like taco version, with your choice of toppings. Enjoy!
