Chicken Parmesan
Who doesn’t love Italian food? We were having a hard time figuring out what we wanted for dinner. One of those nothing sounds good nights.
Well, we finally landed on chicken, but now what kind of chicken? Chicken this, chicken that… How about chicken parmesan?

Who doesn’t like fried chicken, pasta, and cheese?
The chicken was trimmed and seasoned with our own SPG blend and sprinkled with flour. Dipped in egg wash and coated with Italian breadcrumbs.
Little olive oil and garlic, pop open a can of your favorite crushed tomato’s, and you have a ‘gravy’ better than any jar!

Sliced the chicken breasts in half and gave them a quick oil hot tub. Pulled them when they were GBD (golden, browned, and delicious) and knocked on 165. They’ll finish in the oven.

Placed on a wire rack, topped with your better than jar gravy and topped with fresh-graded parm and mozzarella cheese. Bake these bad birds for 10-15 minutes, and you have a meal better than any sit-down “Italian” restaurant!
Chicken Parmesan

Ingredients
4 Thin Sliced Chicken Breasts
Our House SPG Blend (Salt, Pepper, Garlic)
1 Egg
1/4 Cup Flour
1 Cup Italian Breadcrumbs
4 Fine Chopped Garlic Cloves
Large can of crushed tomato’s
Fresh Mozzarella and Parmesan Cheese
Handful of Fresh Basil
Directions
- Fire up cast iron skillet with enough oil for a shallow fry
- Season with SPG and lightly cover chicken with flour
- Dip in egg wash, and coat in breadcrumbs
- Preheat oven to 375, and bring water to boil for pasta
- Add lug of Olive Oil to another pan, and slightly brown garlic. Be careful not to burn garlic.
- Add can of crushed tomatoes to garlic oil. Bring to slow bubble, stirring occasionally
- Fry chicken until 140ish. Chicken will finish off in oven
- Place chicken on wire rack or sheet pan. Cover with sauce and cheeses. Save sauce for pasta
- Bake chicken until 160 internal temp and cheese is browned
- While chicken is finishing, boil noodles to package instructions
- Add remaining sauce to cooked pasta, mix well
- Plate pasta, place chicken on top, finish with more Parmesan cheese and basil. Enjoy!
Notes
- Garlic will go from brown to burnt in a flash.
