Potato Hash With a Twist

1/2 cup red onion, fine chopped
1/2 cup red bell pepper, fine chopped
4-6 medium red potato’s, small chop
8 slices bacon
3-5 eggs
1/4 stick butter
1tbsp House SPG
2tbsp Cajun seasoning
Directions
- Heat pan over medium heat. Add bacon to cool pan to help render fat. Also preheat oven to 375 degrees.
- Optional – while bacon is cooking, par boil potatoes for about 5 minutes
- Remove bacon from pan once cooked. Save some in pan. Add pat of butter.
- Add vegetables to pan, cook about 3 minutes until just softened. Remove and set aside.
- Add back some bacon grease and another pat of butter. Add potato’s, cooking about 10 minutes if already par boiled. All Cajun seasoning once potato’s had started to brown.
- Once potato’s have cooked, add back vegetables and chopped bacon. Combine.
- Mash mixture down a little in pan, and crack eggs over top. Bake in 375 oven for 15-20 minutes or until egg whites fully cooked.
- Top with some crumbled bacon and your favorite hot sauce. Enjoy!
